the first room was set up to give the visitor an impression of the senses and their perception. so a big part of taste is i.e. the smell of food, aswell as the consitency of it.

"with closed eyes, one can differentiate dirty and clean water, cold or warm beer, just by its sound."
the "brezel" is indicating the praying position, monks used to have. for they used to cross their arms to do so. the latin word "bracchium" has the meaning of "arm". which is probably the root of its name.
the plait is a very old and traditional form for bread. oblation of hair seems to be the idea behind giving this form to bread, in the ancient world people cut their hair and sacrificed them to the gods.
food is not only there to meet the needs of energy. it can be a very delightful experience for all our senses. nowadays many people forget about the worth this every day need has. you can put a lot of passion into producing meals and then really enjoy eating them. it also serves a big social value. it is about sharing, experiencing together, caring for each other and enjoying life. delight all your senses! mahlzeit!
